Blueberry Muffins

Honestly, I’m usually skeptical about paleo baking. Its always a weak facsimile of the real thing BUT these are actually incredible. Jen got this recipe from my sister-in-law during the WLC challenge last year and we crushed these regularly. Even Lucy approves.  If you have all the ingredients this whole process takes 20 minutes from start to finish. Cook time is only 10 minutes. They are delish and entirely compliant with the advanced version of WLC.

 

Banana Blueberry Muffins – allowed by WLC J…from Sharon K’s KitchenJ

 

1 stick butter softened

1 tbs vanilla

3 eggs

1 tsp baking soda

1/4 tsp kosher salt

2 ½ cups almond flour

3 ripe mashed bananas

½ cup shredded unsweetened organic coconut

1 tsp ground cinnamon

1 pint fresh blueberries washed and dried

 

 

Blend butter, eggs and vanilla in mixer.  Add almond flour, salt, cinnamon and baking soda until well blended.  Then add the mashed bananas and coconut until well blended.  Add blueberries and mix by hand.

 

Preheat oven to 350.  Grease a muffin pan (sometimes this will make more than a dozen muffins…) and bake for 15 minutes or until a toothpick comes out dry.

 

*one added trick we’ve found is that if you you use “some” coconut flour” with the almond they come out a little dryer which is preferred. about 2/3 almond flour and 1/3 coconut flour
